Hawker Cookies

Prepare ingredients: 75 grams of unsalted butter, 63 grams of powdered sugar, 40 grams of egg yolk, 75 grams of low-gluten flour, 43 grams of egg white, 10 grams of fine sugar, and an appropriate amount of almond flakes.

After the butter is softened, mix with powdered sugar and mix well.

Add the egg yolks in two portions and mix until fully incorporated.

Sift in low-gluten flour.

Mix until there is no dry powder, and set aside for later use.

Add fine sugar to the egg whites and beat them to a wet foaming state (Dawangou).

Add the egg white paste to the egg yolk paste in portions, cut and mix.

The mixed batter is not thin or thick, it is very light and slightly thicker than the cake batter.

Put a silicone mold on a non-stick rimless baking pan, then pour the batter and smooth it.

Remove the mold and place almond slices on the dough.

Put it into the preheated oven and bake it for about 20 minutes at 130 degrees in the middle of the oven until the surface is golden and out of the oven.
Tips:
If there is no non-stick baking pan, please put greased paper or silicone pad on the baking pan and apply batter to prevent the biscuits from being difficult to demould.
