Wash and drain the smelly mandarin fish.

Cut the pepper, green garlic, and garlic cloves into cubes, and shred the onion.

Heat the lard in a hot pan, add the mandarin fish and fry it until both sides are slightly yellow, and remove the oil to control it.

Heat the remaining oil in the pot, add ginger and garlic until fragrant, add onion, stir-fry the tempeh until fragrant, add the mandarin fish, sprinkle with cooking wine, and add 400 ml of boiling water (without the fish body), sugar, chicken essence, and pepper. Bring to a high heat and turn to medium heat for 5-8 minutes. Add the chili and green garlic to the heat to collect the juice.
