Lamb Brain in Clear Soup

Add pork belly and chicken thighs, add green onion and ginger, and bring to a boil.

Skim the foam.

Turn the lid to low heat and cook for 4 hours.

Wash the wolfberry and soak it in clear water.

Wash the choy sum and control water for later use.

Soak sheep brain with cooking wine for 20 minutes.

Put the goat brain into the clear soup.

Add medlar and simmer for 5 minutes on medium heat.

Finally, add choy sum and cook for 30 seconds, season with salt and white pepper, and turn off the heat.

Tips:
1. Sheep brains can be marinated with cooking wine to remove fishy.
2. Add white pepper to enhance the flavor.
