Mackerel Meatballs

The main ingredient, mackerel. (The northerners are called Bayu)

Remove the skin and bones of the mackerel to obtain the meat. (Mackerel basically has no fine bones, so the meat can be easily taken out)

Prepare half-fat and half-lean pork fillings. (Must be fat and thin)

Dadi fish meal is also ready.

Pour the fish into a blender and break it into minced fish.

Take 25 grams of salt, add 100 grams of water and stir until the salt melts into brine.

Pour half of the brine into the fish paste first.

Pour in the remaining half of the brine and continue to stir by hand for about 10 minutes.

Set aside the stirred fish paste.

Put 175 grams of pure sweet potato starch into a pot.

Add 200 grams of water and stir until there are no particles into a slurry.

Then pour all the flour paste into the fish paste, mix and stir by hand for about five or six minutes, so that the fish meat and the flour paste are thoroughly fused. (If you have strength, you can mix for more time)

All materials have been stirred and mixed. Next, squeeze the balls.

Use your hands to take the fish paste back and forth to make a smooth, squeeze out the small ball-shaped balls at the mouth of the tiger.

Use a spoon 🥄 to squeeze the small balls into the steamer.

Put an appropriate amount of water on the pot to boil, put in the squeezed balls, cover tightly, and steam over high heat for 20 minutes to get out of the pot.

Tips:
1: You can divide the ones you can't finish at one time. Put them in the quick-frozen layer of the refrigerator. When you want to eat them, take them out and thaw them. You can cook soup, noodles, fried rice, etc. ~ Stewed celery and various ways of eating, steamed. You can eat.
2: If you want to bake the ground fish meal by yourself, the ground fish you bought is dried in the sun, you don't need to wash it, just bake it directly. It must be baked until it is crispy and not bitter.
3: The starch must be pure sweet potato starch.
