Making Fried Dough Sticks
1.
Take a large bowl and add warm water, corn oil, egg liquid, salt, aluminum-free baking powder, and baking soda in sequence. (This recipe can make about 10 fried dough sticks.)
2.
Put on disposable gloves and mix well with your hands.
3.
Pour in high-gluten flour. (It is best to use high-gluten flour for fritters. If you don't have it, you can use medium-gluten flour instead, but you can't use low-gluten flour, otherwise it won't make a puffy taste.)
4.
The dough and the dough into the "three-light state". (Face light, hand light, pot light.)
5.
Put the dough in a fresh-keeping bag, seal it, and put it in the refrigerator overnight. (This step is to relax the dough, the length of the relaxation time can be adjusted, and the relaxed dough is more malleable.)
6.
Take out the dough, sprinkle it with flour to prevent stickiness, and roll the dough into a long piece of about 1cm thick.
7.
Use a scraper to evenly divide into strips with a width of about 1 cm.
8.
Use a brush to remove excess flour on the surface. (Be sure to brush off the excess flour, and overlap the two portions of noodles later to prevent them from falling apart.)
9.
Brush a little water on the surface of the noodles to overlap the two portions.
10.
Press the middle firmly with chopsticks.
11.
Grasp the two ends of the noodles, stretch them slightly, pinch the ends tightly.

13.
Pour an appropriate amount of oil into the pot, heat it to 80% heat, add the noodles, and quickly expand. (The oil temperature must be high, so that the noodles will expand rapidly when they go down.)
14.
Use chopsticks to keep turning the fried dough sticks so that they can be fried evenly.
15.
Fry until golden, remove the oil, put on a kitchen towel to absorb the excess oil.

TIPS
1 / Making fried dough sticks, I have not found a way to replace frying at the moment. If you use an air fryer to make it, you can buy commercially available frozen fried dough sticks.
2 / Aluminum-free baking powder: It is a compound leavening agent, which contains the ingredients of edible baking soda, with neutral properties. Mainly used in the production of cakes and western cakes, which can make the finished product taste softer. Edible baking soda: It is also a kind of food additive, which is alkaline and also has a hair effect.
