Peanut Stewed Trotter

The pig's feet are cleaned and chopped into sections. I prefer the hind feet so that there is less meat and a layer of skin is full of collagen.

Put an appropriate amount of water in a pot, two slices of ginger and two scallions, and bring to a boil.
