Pork Knuckles and Ginger Vinegar

Wash the pig's feet clean and boil it in a pot under cold water for about 15 minutes. Bleeding water, remove and rinse, pluck the pig's hair with a pinch, rinse and drain the water.

Peel the ginger and cut into thick slices.

A big bottle of sweet vinegar.

Put the pig's feet, ginger and sweet vinegar in a casserole and cook for about 1 hour. The pig's feet can be easily inserted with chopsticks. (The authentic method is generally to stir-fry the ginger and pig's feet in a dry pan until the water is dry, and then put them in sweet vinegar to cook. I saved the stir-frying process and cooked it directly.)

The eggs are cooked and peeled.

Put it in the cooked ginger vinegar and continue to cook for about 10 minutes, turn off the heat, and simmer for 1 night.

Bring to a boil the next day, and use a grease trap to skim off the oil. In this way, it will not be greasy to eat, healthy and not worrying about getting fat.

Tips:
1. Don't put more pig's feet and eggs at one time, add them and cook them after each meal.
2. Boil ginger vinegar every day in summer and once every two days in winter. Ginger vinegar will not deteriorate and can be stored for a long time.
3. People with hot body should eat less.
