Salted Fish and Eggplant Claypot

Cut the eggplant into strips and soak in water.

Put more oil in the pan, put the eggplant strips in and fry it, and drain the oil out of the pan when it becomes slightly soft.

Then deep-fry the salted fish and remove the browned fish to drain the oil.

Pour out the oil in the pan, and saute the garlic and dried chili segments in the pan with a little oil left.

Then put the minced meat in and fry out the oil.

Then put the eggplant strips back into the pot, add a spoonful of soy sauce, a pinch of salt and chicken essence and stir-fry.

Add a little water to the sauteed eggplant, put it in a casserole, cover and simmer until the eggplant is soft.

Then sprinkle with chopped green onion.
9.
Savory and delicious, good food for dinner.
Tips:
Soak the eggplant in water, so the process will absorb less oil.
