Shredded Papaya

Soak dried papaya shreds in cold water for 8 minutes, wash and squeeze the water. Soak in boiling water for 1 minute, remove the water and squeeze it out, and let cool.

Prepare ginger, garlic, and small red peppers.

Wash and chop.

Crush the rock candy.

Mix red pepper, ginger, garlic, rock sugar, light soy sauce, and soy sauce together to make a sauce.

Pour in the sauce, mix well with shredded papaya, salt and sesame oil.
Tips:
Freshly mixed papaya shreds can be eaten, but it tastes better if it is left for a day.
The shredded papaya should not be soaked for too long, otherwise it will not be crispy.
