Steamed Sesame Swordfish

Wash ginger, green onion, and coriander, shred ginger, cut green onion and coriander into sections, and dice garlic.

Clean the fish gills and fish maw, wash them, and cut them into small pieces.

Add edible oil, salt, cooking wine, chicken essence, light soy sauce, oyster sauce, chili sauce, ginger, garlic and marinate for 1 hour.

When the water in the pot is boiled, put the fish in and steam it. Steam on high heat for 7-10 minutes (depending on the thickness and size of the fish), turn off the heat and let it sit for 2 minutes.

Take out the steamed fish, add chopped green onion and coriander. Pour oil into the pot, heat it to 60% heat (smoke is visible), turn off the heat, and pour the oil evenly on the fish, OK!
Tips:
Finally, pour a little hot oil on the fish, and the hot oil should be poured on the chopped green onion and coriander, it will have a fragrant green onion oil taste.
