Stewed Octopus with Chopped Pepper
1.
First prepare the ingredients: Sunnon Eco-tailfish, dried shallots, chopped shallots, ginger, garlic and homemade chopped pepper sauce.
2.
Remove the octopus from the bag, soak it in cold water and thaw it, remove the internal organs, cut off the fins, and clean it to control the moisture.
3.
Then cut the octopus into small sections and cut the fish with a diamond-shaped flower knife (then cut the scallion into small pieces, shred part of the ginger and mince part of the mince, mince the garlic for later use. Forget to take this step.)
4.
Put the fish segments, shredded ginger and pepper in a basin, and add 2 grams of salt.
5.
Add 25 grams of rice wine and stir a few times and marinate for half an hour.
6.
The marinated hairtail remove the seasoning and dry the fish body, then dip it in the egg white and then dip it in dry starch.
7.
Fry in hot oil pan
8.
Pick them out until they are golden on both sides.
9.
Heat in a separate wok and add corn oil, then add the chopped green onions and stir fry.
10.
When the dried shallots are stir-fried until they turn slightly yellow, add the minced ginger and garlic
11.
Add homemade chopped pepper sauce and stir fry for a while
12.
Add 10g light soy sauce
13.
Add 10 grams of oyster sauce
14.
Add 300ml water
15.
After boiling, add the fried octopus, cover and simmer for about ten minutes.
16.
When the soup is thick, sprinkle with chopped green onions and eat it!
Tips:
1Because the chopped chili sauce is very salty, there is no need to add salt when stewing.
2If you don't have any shallots, use scallions.
3 The scales of hairtail are very nutritious, so there is no need to remove them.
