Stir-fried Bitter Melon with Crystal Meat

Slice the crystal meat and marinate it with salt, cooking wine, and soy sauce for more than 20 minutes.

Slice the bitter gourd, remove the seeds and cut into thin slices.

Boil water in a pot, add a little salt, and blanch the bitter melon for 10 seconds, then remove the water to drain.

Put the oil in the pan to heat up, add the crystal meat and stir-fry until it turns white, add oyster sauce and stir-fry quickly, then set it up.

Wash the pot, heat the oil, add the bitter melon, add a little sugar and stir fry for a few times.

Add the crystal meat and stir well, then add the chicken essence to taste.
Tips:
1. Blanching the bitter gourd can appropriately reduce the bitterness.
2. Crystal meat should not be fried for a long time, so as not to affect the taste due to aging meat.
