Stir-fried Chinese Mountain Pills with Hot Pepper

Wash yam

Soak yam peeled and sliced (add white vinegar in clear water, for fear that the yam will become black due to oxidation). Also apply vinegar to your hands to avoid itching.

Make water in a pot, boil the yam under the water, don't blanch it for a long time, remove it after blanching it.

Prepare green onion, ginger and garlic for later use.

Remove the ribs of sharp peppers (you can eat spicy ones without removing them), cut them well and set aside.
