Stir-fried Vermicelli with Cabbage in Xo Seafood Sauce

Cut the ginger, garlic and green pepper and set aside.

Wash the cabbage, spin dry, and shred.

Pour a proper amount of water in the pot, pour the vermicelli and cook thoroughly. This is a pea vermicelli, which is more resistant to cooking. Cook until the chopsticks loosen easily and the vermicelli becomes soft.

Rinse the cooked vermicelli with tap water and dry.

Heat the pan, pour some oil, add ginger, garlic, green pepper and stir fry, then add cabbage and stir-fry together until it is broken. First add a small amount of salt to adjust the flavor. There will be seasoning later, so don't add too much here.

Pour into fans.

Add the right amount of XO seafood sauce. This sauce is more spicy, so I didn't add a lot. If you like spicy food, you can add more. The fried vermicelli tastes very good. If the sauce is not too much, you can add some light soy sauce to adjust the flavor.

Finally, stir-fry evenly before serving.
Tips:
1. Fans recommend using pea fans, which are more tenacious and not easy to paste. Cook them first, and be careful not to cook too badly, as the vermicelli becomes soft and the chopsticks can snap off. Then rinse with tap water to cool down to maintain tenacity.
2. Stir-fry the cabbage first, then add the vermicelli, stir-fry together, and season.
