Thai Spicy Stir-fried Peanuts and Red Rice

Red rice is washed 1-2 times with mineral water, and then soaked in mineral water: 1:1 for half an hour;

Pour the soaked mineral water into the rice cooker and cook;

After cooking, simmer for 10 minutes and then let the rice out to cool;

Put the peanuts in the oven and bake for 7 minutes, take them out and let cool, peel them and smash them;

Finely chop onion; finely chop pepper into small rings; finely chop coriander;

Cut the green lemon and squeeze out one tablespoon to two tablespoons of juice for later use;

Heat 2 spoons of sesame oil in a pot, add onion and chili rings and sauté until soft until slightly yellow;

Pour in the cold red rice and stir fry, then add half a spoon of soy sauce and stir well;

Turn off the heat; add peanuts, coriander and lemon juice, add salt and stir well~
Tips:
1. If you like the rice to be dry, the ratio of water to rice should be 1:1 or less; or you can cook the rice without soaking for half an hour;
2. The amount of pepper can be used according to personal taste;
3. Roasted peanuts is just my habit, and it can be used for frying or microwave;
4. The size of broken peanuts can be determined according to personal preference.
