Main ingredients: fresh grass carp head (the best silver carp head), 300 grams of soft tofu. Accessories: vegetable oil, salt, dark soy sauce, chives, ginger, coriander, sugar, 1 gram of chicken essence, cooking wine, one star anise, 1 gram of peppercorns

Clean the grass carp heads and wash them, cut them with a flower knife. When cutting the fish heads, it is best to leave more fish meat, so that the stewed fish heads are delicious, and then evenly pour the cooking wine on the fish heads, and then evenly sprinkle a layer Thin salt. The salt used here is about one gram. After these are processed, put the fish head aside and marinate for 20 minutes. The purpose of this is to remove the fishy smell from the fish head.

Wash the green onion and ginger and cut into small pieces, wash the coriander and cut into sections, and cut the tofu into pieces. Do not cut the tofu too small, because the fish head is relatively large, so it looks good and has appetite. Blanch the tofu with hot water to remove the beany taste. You can make tofu not fragile. Depending on your operating time, you can also not blanch the water

Heat the pan with cold oil, heat 70% of the fish head and fry slowly

Add chicken essence (optional) and cook for 2 minutes

Tips:
1. Add the tofu into the pot, don't turn it too often, so as not to break, hold the handle of the pot and shake it gently or turn it gently
