Tofu Stewed with Crucian Carp

Remove the internal organs, wash and add a little salt, cooking wine, ginger and green onions to marinate in advance (I have marinated for more than ten hours and put in the refrigerator)

Cut the tofu into cubes.

Add proper amount of oil to the pot, add green onions, ginger, garlic, dried red pepper, and Chinese pepper to fry to create a fragrance.

Remove the scallion and ginger from the marinated crucian carp, wipe off the water, and place it in the pot.

Fry until shells are formed on both sides.

Add appropriate amount of water, cooking wine, and salt, bring to a boil over high heat, turn to medium and low heat and simmer slowly.

Stew until the soup is slightly white, turn to medium heat, add tofu and enoki mushrooms and stew together.

Stew until the tofu is delicious and the soup is milky white. After turning off the heat, add coriander.
9.
Add pepper to taste to remove fishy.
Tips:
Don't be anxious when frying fish, fry one side and then fry the other side.
