Zucchini Night Orchid Soup

Peel the zucchini (mao gourd), cut in half, and slice with an oblique knife.

Wash the night orchid.
3.
Wash the scallops.
4.
Beat the eggs and set aside.

Put water and small scallops in a pot to bring to a boil, simmer for 10 minutes.

Add the zucchini and cook until soft.

Add the night orchid and cook for about 1 minute.
8.
Season with salt, then beat in egg drop.
9.
Light and delicious.
