After defrosting, the Longli fish fillet is cut into larger pieces (a fish is cut into about ten pieces). The disadvantage of frozen fish is that it has a high water content, so you have to gently grab some of the water with your hands, and then use a kitchen towel to absorb the surface water.

Spread a little salt on both sides of the fish pieces and marinate for a quarter of an hour. (I forgot to take pictures at this step)

Peel the ginger and cut into shreds. Put it into a garlic press to press out the ginger juice. It takes about a teaspoon of ginger juice.

Spread tin foil on the baking tray, roll up the tin foil slightly, and brush a thin layer of cooking oil on the surface to prevent sticking. Brush both sides of the fish pieces with ginger sauce and then a layer of oil, and then put them in the baking tray.

Preheat the oven at 200°C for 5 minutes, then put it in the baking tray, and bake the middle layer at 200°C for 15 minutes.

Take out the fish pieces and brush them with ginger sauce and oil again. Turn them over and put them on the baking tray. Sprinkle ground black pepper and dried basil on the surface. You can also sprinkle some chili powder if you like spicy food. The kids ate it so I didn't put it in, and the black pepper was already a little spicy. Place in the upper oven at 200 degrees and bake for 15 minutes.

After the oven is hot, sprinkle a little lemon juice on the top, and you can put it on the plate with the tin foil. The surface layer of the grilled fish with lemon and ginger sauce is scorched, and the lower layer is tender and salty.
Tips:
1. Frozen fish has a high water content, so some water must be removed before cooking, otherwise water will appear when grilled.
2. There is not much meat in a fish fillet, so when salting the surface, the amount of salt must be controlled, rather than too much.
3. Depending on the oven, the baking time will also be different. Adjust the time appropriately according to your own oven. My oven is slow.
