Authentic Korean Fried Noodles

First of all, material preparation: a must! ! Korean spring sauce. Don't ask me if I can use Beijing fried sauce instead. If you want to replace this, don't look down at TT. Go to the imported food cabinets in nearby supermarkets or Korean food stores. You must buy such a black packet of spring sauce. Generally one pack is 300g, one pack is enough.
It’s not expensive to use in Korea. 1,600 Korean won is equivalent to about 9.5 yuan.
Let's fry the all-purpose fried sauce first. This fried sauce can be stored in the refrigerator for several months without any problems.
So I first teach you how to fry all-purpose fried sauce:

Diced onion, 3 paper cups, green onions, 1 paper cup of minced pork and 2 paper cups, are all measured by paper cups, so there is no difficulty for beginners!

A small tip for cutting onions faster: Cut horizontally first, do not cut off the roots, and then cut vertically like a chessboard, then the onions will soon become small dices. Just deal with the roots last.
So far our materials are ready.

First, put 1 paper cup of cold oil in the pan, pour the chopped green onion and 1 paper cup into it. Stir-fry for a little longer, until it is almost burnt. Stir the scallion oil.

Add the meat and chopped onion, and fry until there is almost no moisture.

Put two-thirds of the white sugar in a paper cup and place it in a circle for a more even taste.

Put one-half paper cup of oyster sauce in a circle and put one-third paper cup of soy sauce in a circle.

Put 300g of spring sauce in and mix well. Turn to a small fire, and after about 10 minutes, you will see a layer of oil floating out.

Look, the prepared all-purpose deep-fried sauce has about 1cm thick oil layer!

This is the fried all-purpose deep-fried sauce! Generally, Korean families keep a box in the refrigerator and take it out for cooking at any time. Keep refrigerated and can be eaten for several months.

Material: (for two persons)
One and a half onions (I don’t like onions, just one and a half, usually one for one person)

Cut the squash into slices, cut the onion into slices, and chop the green onions.

The handmade noodles for two people must be cooked first. The ones bought in Korea look like this.

When the water is boiled, put the hand-made noodles. Generally, don't put them in a lump. If they are shaken, they will not stick together.

After cooking, rinse it with cold water, about 3 times or so, to rinse off the starch on the surface, it is delicious and not sticky.

Drain the oil, don't wait for the oil to heat up, put the green onions directly after the oil is put in. This is not easy to confuse. It's the same as when making all-purpose spring sauce. The scallions have the best fragrance when they are about to brown. At this time, the scallion oil will burst.

Add the squash and onions and fry them until there is no moisture, that is, when the onions are transparent. Fill in the full two and a half spoons (small spoons for eating) the all-purpose deep-fried sauce that we made. Mix well with onion and squash.

Put in the handmade noodles just cooked. Just mix well. If the taste is not enough, you can add another spoonful of spring sauce, or add a little salt to taste according to your personal taste!
