I added a little water in the middle, and the dough became soft; I use this bread machine often and I am familiar with it, so when the dough is kneaded for 10 minutes, the dough can be pulled out of the thick film, put the butter into the bread bucket, and start the machine to complete the rest. For the next 10 minutes, add another kneading program for 10 minutes;

After adding butter and kneading for 20 minutes, this kind of elastic film can be pulled out. The dough is very humid, slightly sticky, poke a hole, the edge is very smooth, and the kneading is over;

Take out the stirring rod, round the dough and put it in the bucket, cover with a damp cloth and then cover the lid, start the fermentation process for 1 hour, and adjust the time according to the dough state

When the dough is twice the original size, dip your fingers in a little flour and poke a hole on the top without collapsing or shrinking, and fermentation is successful;

Take out the dough and place it on the kneading mat, pat it lightly, weigh it into 6 equal parts, knead round, cover with plastic wrap and let it sit for about 15 minutes to relax the dough;

Roll up from the long side to the sharp corners, because the dough is very humid, so the seals are naturally glued together;

Finish the other doughs in turn, put them in a non-stick baking pan, and place them in a warm and humid place for secondary fermentation; I put them in the oven, and put a bowl of hot water, without a set temperature, and leave them naturally;

When the raw bread is 1.5-2 times the original size, brush the surface with a layer of egg liquid. After the oven has been preheated at 180 degrees, send it to the middle or lower level of the oven, and the heat is 170 degrees, and the heat is 180 degrees for 20 minutes. From left to right, adjust the time and temperature according to your own oven, transfer it to a drying rack after being baked, and put it in a bag after it is naturally cooled. It can be eaten directly or used as a hamburger.
Tips:
1. If you don't have this black rice bread flour, you can grind some black rice flour and black sesame flour by yourself, the ratio can be adjusted by yourself, but it is best not to exceed 20% of the flour amount, so as not to affect the formation of gluten and cause the bread to taste bad; Soy milk is homemade, and there is a lot of muddy bottom, so the amount is adjusted according to the consistency of the soy milk used, if it is replaced with water, it is used at 60-70% of the amount of flour;
