Braised Mud Fish
1.
Wash the muddy fish, cut twice with a knife on the fish body to taste it, and dry it for later use
2.
Heat the oil on a low fire to about 80 degrees and fry the fish on both sides. Because the fish is very small, it must not be fried for too long, otherwise it will burn.
3.
Slightly golden to both sides
4.
Add the green onion, sliced ginger and millet pepper prepared in advance
5.
Simmer on medium heat for two minutes, then collect the juice on high heat
