Braised Pork Trotters

Cut the trotters first.

Prepare the spices.

Without putting oil in the pot, put the trotters on medium heat and stir until the surface is slightly yellow.
Tip: This step is the key to keeping the smell of pig's feet without getting greasy. Don't turn on high heat to avoid burning. Slowly stir until slightly yellow on medium heat. The process is very fragrant. Remember to control your saliva!

Pour a little peanut oil into the pot, add star anise, cinnamon, chili, and garlic seeds, and saute over medium heat until fragrant.

Add the trotters, pour in the braised soy sauce and stir well.

Pour in half a bowl of cooking wine and half a bowl of water, sprinkle in salt and stir-fry, simmer for about ten minutes.
Tip: I use boiled trotters, so I just need to cook them for a good taste. It takes more than an hour to cook with raw trotters, or use a pressure cooker, which will be faster.

After the soup is dry, pour in the light soy sauce and stir-fry, then serve.
