Braised Shark Skin

Slice garlic, soak shiitake mushrooms and cut into thin slices, cut bitter gourd into thin slices, cut coriander into sections, and soak scallops in advance.

Take the green onion and ginger into the pot and boil, then add the washed shark skin and cook for 1 minute. Set aside.

Add scallops, shiitake mushrooms, and garlic slices in a hot pot over low heat.

After sauteing, add about 500ml of chicken broth. The chicken broth is boiled with scallops and chicken racks.

Bring to a boil and add the shark skin.

Bring to a boil, add chicken powder and fish sauce and cook for a while, season to taste, turn to medium-low heat and cook.

Then add pepper, chicken juice, oyster sauce, sugar.

Boil for about 7~8 minutes and add bitter gourd slices.

Cook for 1 minute and add some dark soy sauce.

The soup is almost thickened and added to the coriander section to turn off the hot pot.

Serve on the plate, the shark skin is rich in gelatin, and the cooked soup is very viscous, and bitter gourd has the effect of relieving greasiness.
