Cold Dried Lotus Root Vermicelli

Prepare a soup pot and add water. A small catch for dry lotus root fans (200g for four people).

After the vermicelli is rinsed with water, put it in the pot and turn on the fire.

Turn off the heat after the water has boiled for one minute, and leave the vermicelli soaked in hot water until the temperature drops to room temperature. (If you are in a hurry to finish, you need to boil the water for 5 minutes, then turn off the heat and drain the water)

Drain the water and put it in the dish.

Add ingredients: millet pepper, green onion, coriander.

Add soy sauce.

Add peanut oil and salt.

Tips:
1. Don't drain the water too dry, a little juice will make it smoother.
2. Mixing ingredients can be prepared separately in a large bowl. If you want to eat at the table, you can put a chopstick into your own bowl, add the condiments, and mix it.
