Cold Shredded Bamboo Shoots

Rinse the bamboo shoots in water.

Tear the washed bamboo shoots into thin strips by hand.
3.
Chop the young ginger into minced ginger, wash the coriander and large leek leaves (wild leek) and cut into small pieces.
4.
Put the chopped young ginger, coriander, and large leek leaves into a bowl of bamboo shoots.
5.
Add a spoonful of chopped peppers.
Tips:
If you put some spicy green rice in this dish, the taste will be more refreshing and spicy. I didn't dare to eat too spicy for my uncomfortable throat these past few days, so I didn't put green rice spicy.
