Five Spice Salted Eggs (salted Duck Eggs)

Purchase a few fresh duck eggs. Wash the duck eggs and put them in an oil-free basin or other container to drain the water.

In an oil-free boiling pot, put an appropriate amount of water, pour in all the spices and boil for about 20 minutes, add salt and boil until it no longer melts (saturated brine). After the water cools, remove the spices inside.

Take a clean bowl, pour an appropriate amount of white wine, and roll the duck eggs into the wine one by one.

Pour the boiled spice water into a jar or wine bottle filled with duck eggs. Then pour about 50 grams of white wine in it, sprinkle a small handful of salt, then seal the mouth of the jar/bottle with plastic wrap, and then close the lid. Marinate for more than 40 days.
Tips:
After the duck eggs are boiled in white wine, they must be placed for a few minutes. One is for sterilization, but this can open the holes in the eggshells to facilitate the penetration of salt water, so that the egg yolks will flow over the sand and the oil will flow.
