3.
Pour 500 grams of flour into a basin, and pour 50 grams of oil in a small milk pot to heat;
4.
Pour the hot oil into the flour and stir evenly. The state of the stirred flour is that kind of sandy grain!
5.
Pour 100 grams of boiling water and stir evenly, of course it is the kind of boiling water;
6.
Add 10 grams of salt and mix well. In fact, this process of stirring is also a process to cool the flour. Set it aside until it is warm, add baking soda and mix well;
7.
Pour the yeast into a little warm water and stir until it melts;
8.
Pour into warm flour and mix well;
9.
Then add warm water to the flour little by little, knead it by hand each time and add it again until it becomes a smooth dough. This way of adding water and kneading repeatedly, we call it "smashing water" here;
10.
After the dough is kneaded, cover it with plastic wrap and ferment to double its size;
11.
Take out the fermented dough and knead it evenly, knead it into a strip;
12.
Divide into small doses and knead round, use a brush to lightly apply a layer of oil, cover with plastic wrap and set aside;
13.
Pour an appropriate amount of oil into the wok and heat until 80% hot;
14.
While the oil is hot, squeeze each small dose by hand and roll it into a circle, and poke a hole in the middle with your index finger;
15.
Use the rolling pin to roll the side down and the side down! Place them on the chopping board and complete each one in turn;
16.
Put a small dough into the frying pan, if it can float, you can start frying;
17.
Take a dough cake face down, that is, the rolled side down, put it into the oil pan, turn it in the middle and fry it until golden brown and remove it;

Tips:
1) The state of the reconciled dough should be harder than the dough of deep-fried dough sticks, but softer than the dough of steamed buns. Because the water absorption of flour is different, the amount of water that needs to be added depends on the state of the dough. 2) When frying pancakes, roll them face down, they will rise a lot, very loud!
