Fried Lotus Root Slices

Wash the fresh lotus root slices and soak the slices in water for 10 minutes. Add a little white vinegar to make the lotus root not discoloration.

Put 1/2 clean water in a 2 liter soup pot, bring to a boil over medium heat, add the lotus root slices, blanch them, remove them, and soak them in clean water (can be boiled) until cold. Then add salt, vinegar, and sugar and mix well.

Preheat a 1 liter soup pot over medium heat, add oil, add red sweet pepper and ginger, and sauté until fragrant, mix well with lotus root slices from step 2, and it is ready.
