A very homely hot and sour noodle. The ingredients are all available at home. After going out for a few days, I have eaten a lot of various bento dim sum cakes. At the end of the evening, everyone in the family said they want to eat hot and sour noodles. Okay, come back. Just cook it at home, the family eats hot and sour and refreshing, and some watermelon after the meal... It’s awesome

Homemade Hot and Sour Noodles

1. Soak dry vermicelli with warm water (about half an hour)

2. Put the chopped green onion in a bowl and set aside

3. Put in the lard residue (it is recommended to use some lard or lard residue if you do not prepare the simmered meat, so that the hot and sour powder will be fragrant. If you have meat simmered meat, use meat simmered meat)

4. Put in soy sauce, vinegar, salt, chicken essence

5. Add pepper oil (there is a recipe for making pepper oil)

6. Add chili oil (there is a recipe for making chili oil)

7. Put all the spices

8. Boil a pot of water in a saucepan, with more water

9. After boiling, add the soaked vermicelli

10. Poke away with chopsticks

11. Add some vegetables when the vermicelli is slightly boiled

12. After the pot is opened, use a spoon to scoop a spoonful of water

13. Pour into a bowl and make a soup

14. Cook until the vermicelli is soft and ready to be served

Tips:

Heart-warming reminder: The vermicelli must be soaked in advance before being cooked.
To eat hot and sour noodles must be a little bit oily and fragrant. You can use meat, ribs, etc. to make meat sinters. If you don’t have any, you can use lard or lard residue. It's not as good as having the fragrance of meat oil. It's up to you.
