Weigh 5g of yeast and stir to dissolve with 100ml of purified water.

Pour the dissolved yeast and the remaining 250ml of water (gradually add water in several steps, add water while kneading while observing), and knead the dough in the bowl.

Weigh 30g olive oil, pour it into the dough, sprinkle a little dry wheat flour, and continue to knead the dough.

Sprinkle dry wheat flour on a large cutting board and continue to knead the dough.

After kneading into a smooth dough, cover it with a slightly damp cloth, and leave it for 2 hours for the first time. *Slightly damp-after damp, wring out vigorously until no drop of water can be squeezed out.

Preheat the oven to 235 degrees (I set the temperature to 235 degrees and set it for 5 minutes), then pour 50ml of water into an empty baking pan below before putting the dough into the oven. Bake at 235°C for 4 minutes, then adjust to 220°C and bake for 11 minutes.
