I have stocked a little bit of old brine that has been kept for several years, and I will take it out to reheat it after a while. I happened to see this dried bean curd when I went to the vegetable market. I thought that I would buy this one by myself anyway. The taste is much better.

Tips:

1. The dried tofu I bought is easy to taste, and it can be done in five minutes;
2. Don't cook the oily tofu very well, it will be much darker when it gets cold;
3. Regarding the old brine, after each time it is boiled and filtered, boiled and then cooled, it can be frozen in the refrigerator. Take it out for about a month and re-freeze. If you need it within a week, you can keep it in the refrigerator;
4. Regarding the old stew, the soy products cannot be reused after they have been boiled, so I usually boil the old stew first, pack a part of it and freeze it, and then put in the dried tofu. The soy products are easier to taste and don’t need a lot of them. The soup will do.
