Matcha Dakwaz

70 grams of white sugar, 130 grams of matcha powder, 5 grams of almond powder, 40 grams of low-gluten flour, 10 grams of egg yolk, 40 grams of butter, 140 grams of hazelnut paste, 10 grams of almond paste, 10 grams.

Sift almond powder, 40 grams of fine sugar, low-gluten flour, and matcha powder and mix for later use.

Put the egg whites in a mixing bowl, add 10 grams of fine sugar, adjust the electric whisk to medium speed, and beat it to a fluffy state.

Continue to add 10 grams of granulated sugar, do the same, add another 10 grams of granulated sugar, and beat until hard foaming (when the electric whisk is lifted, the tail is straight).

Add the mixed powder to the meringue, mix it gently with a spatula, and put it into a piping bag.
