Mint Golden Bamboo Beef Tendon

Prepare beef tendons.

Prepare the carrots.

Prepare fresh mint leaves.

Prepare green onions, ginger, garlic, dried red peppers, and star anise.

Cut the beef tendon into small pieces and soak the bleeding water in cold water until the water is clear.

Put the beef shank in a pressure cooker and add an appropriate amount of cold water.

Add star anise, dried red pepper, ginger; add salt and steamed fish soy sauce.

After boiling, skim off the foam; cover and press for 20 minutes.

Wash carrots and cut into pieces with a hob; slice green onions and ginger, and smash garlic.

Heat oil in a pan, sauté the onion, ginger, and garlic; pour in carrots and stir fry; add appropriate amount of salt and stir well.

Pour in the cooked beef tendon and gravy, stir-fry; cook for 15 minutes.

Add fresh mint and pepper, stir-fry, simmer for 5 minutes; adjust the flavor and put it into a bowl.
Tips:
1. Carotene is a fat-soluble substance, so it can be absorbed well only in oil. Therefore, when eating carrots, it is best to cook them with oil or simmer them with meat to ensure that the effective ingredients are absorbed and utilized by the body.
2. Mint should not be used more for those who are weak and sweaty.
