Noodles with Mushroom Meat Sauce

Dried shiitake mushrooms are pre-soaked. It can be washed if it is slightly softer, then change to clean water and soak until it becomes soft, so that the water used to soak the mushrooms can be used to cook the sauce.

The ingredients are ready. Peel the pork belly, wash, and chop into pellets. The soaked dried shiitake mushrooms squeeze out the water and chop finely. Garlic and ginger are also minced. Finely chop dried chili.

Soak the noodles first. Soak in warm water for 20-30 minutes.

Heat the pot, add half a bowl of rapeseed oil and cook for a minute or two. Pour in diced shiitake mushrooms, garlic and ginger, and fry until the garlic smells.

Add minced meat and fry until slightly charred.

Add dried chili and fry for a minute or two.

Pour the water for soaking the mushrooms, so that all the ingredients can be submerged. Add oyster sauce.

Add the bean paste, mix well, cover the pot and simmer on medium-low heat for a few minutes. Until the water is almost gone, only the oil is left.

Taste the saltiness, add some salt according to your taste, and cook for another minute or two to melt the salt. The mushroom meat sauce will be fried.

The noodles are almost soaked. Pick up the noodles until they are not hardened.

Add the right amount of fried meat sauce and chopped green onion, mix well and serve.

Tips:
1. This kind of instant noodles cannot be boiled. Soak them in warm or cold water for 20-30 minutes.
2. The meat sauce used for bibimbap should be slightly saltier and more oily, so that it is not easy to spoil.
3. The ingredients can be adjusted according to your own preferences. You can add some sea rice scallops, make hoisin sauce, or add dried tofu and onions. It must be fried. But it is not recommended to put carrots and potatoes, which are easy to boil ingredients. If you like spicy food, you can add more dried chili or millet chili.
