My friend gave some dried Spanish mackerel, which was dried at my own home. The salt content is very low. It is good to eat when fried.

Pan-fried Dried Mackerel

1. Soak the dried Spanish mackerel in clean water to the firmness you like.

2. Chopped green onion and ginger.

3. Cut the soaked dried fish into small pieces.

4. Add green onion and ginger.

5. Add cooking wine.

6. Add the very fresh soy sauce.

7. Add chicken essence, mix well and marinate for more than 30 minutes.

8. Sprinkle with dry flour and mix well.

9. Beat the eggs and set aside.

10. Dip the dried Spanish mackerel with egg mixture.

11. Add oil to a nonstick pan, heat it up and fry the dried fish over low heat.

12. Fry until golden on both sides.

Tips:

When marinating, the dried fish is salty, no need to add salt.
