Sand White Mushroom Soup

Shabai scallops contain almost no sediment, so they do not need to be raised and spit sand. They are cleaned with a brush and drained for use.

Wash the crab mushrooms and set aside.

Cut the tofu into small pieces and set aside.

Peel and dice tomatoes for later use.

Chop the chives and set aside.
