Sauce Trotters

Scald the pig's feet with hot water, scrape the surface of the pig's feet with a sharp knife, and then sing the pig's feet with a long rod lighter. Cut the trotters with a knife, divide them into two, and soak them in cold water for an hour.

Add a little cooking wine to a pot of cold water for trotters and boil on high heat. Cook for 10 minutes on low heat. Skim off the floating foam. Be sure to cook for a while to remove the floating foam as much as possible. After removing it, rinse it with clean water.

Put the cleaned trotters into the electric pressure cooker

Add green onion, ginger slices, cooking wine, light soy sauce, soy sauce, white sugar, pepper, star anise, cinnamon bay leaves

Add in the boiling water prepared in advance, just beyond the trotters,

After about an hour, the pressure is maintained and deflated. You can easily penetrate the trotters with chopsticks and add a little salt.

Take out the pig's feet, let it cool and eat. Don't waste the soup and put it into a small pot. After a few hours, it will become frozen. It can be used as a soup or a soup bag.
Tips:
The fine hair on the trotters must be cleaned, otherwise it will directly affect the whole. When blanching the water, add some cooking wine to remove the earthy smell of the trotters.
