Shepherd's Purse Shrimp Balls

Wash the shepherd's purse, blanch it in boiling water, and then cool it in cold water. Remove and squeeze out the water.

Chop on the chopping board.

Add salt to the ground meat, chicken essence, green onion and ginger, and appropriate amount of water. Stir in the chopped shepherd's purse and mix into shepherd's purse meat.

Remove the head and shell of the sand prawns, and pull out the shrimp thread.

Wrap the shrimp body with shepherd's purse meat.

Put a layer of starch in the starch.

Boil them in a pot of boiling water.

Remove and serve, add a small amount of water to the pot, seasoning and add a little wet starch to thicken the shepherd's purse shrimp ball.
Tips:
When boiling the shepherd's purse, immediately put it in cold water to cool it out of the pot, so as to keep the shepherd's purse green.
