Simple Hawthorn Cake

The hawthorn was cleaned to remove the pedicles and pits. There was no special pitting tool, so I cut the two petals directly with a knife, and then used a knife to remove the pits and pedicles quickly. The pulp weighed 600 grams after it was cleaned.

Pour the pulp into the pot with 100ml of water and heat it on a low fire. Do not add too much water to ensure that the pot does not paste. Do not use an iron pot, use stainless steel or a casserole.

The flesh of hawthorn can become soft and rotten in about ten minutes.

Put it in a blender and puree it.

Add a small amount of water to the sugar and boil it on low heat to melt and bubbling.

Scrape the puree from the blender into the pot with a spatula.

Boil on low heat, stirring constantly with a spatula or wooden spatula to avoid mashing the pot, until the puree becomes semi-solid and sticks to the spatula and cannot be shaken off. Turn off the heat, about fifteen minutes.

Put it into a container with a layer of cooking oil while it is hot. It should be heat-resistant, otherwise the container will be easily deformed. Then the surface is smoothed with a spatula. I don't apply it very flat 😅

After it is completely cooled, use a small knife to slowly turn along the inner wall of the box to demold. I use a hook mold knife.

I used a drop-shaped biscuit mold, which is a flower pattern after pressing and putting it together.

Use your imagination, put it in a pattern you like, or directly cut into long strips or small pieces.
Tips:
The ratio of pulp to sugar is 2:1. The hawthorn cake made from this ratio is sweet and sour. You can adjust the amount of sugar according to your taste.
