Sour and Spicy Chicken Noodles

Put the chicken breasts into a pot with cold water, add 3-4 slices of ginger, 15-20 slices of Chinese pepper, 1 tablespoon of cooking wine, and bring to a boil.

After boiling for 2 minutes, turn off the heat and do not open the lid to simmer the chicken breasts. In doing so, the chicken breast is very tender and not firewood, and it saves energy. I usually boil it in the morning before going to work, and use it when I go home at noon.

Tear the cooked chicken breasts into filaments for later use. The chicken breast is easy to tear, just tear it straight along the lines.

Cut the cucumber into thin strips in advance, and you can choose other side dishes you like.

Mix 1 tablespoon of vinegar, 1 tablespoon of chili oil, 1 tablespoon of pepper noodles, 1 tablespoon of shiitake mushrooms, 1 tablespoon of sesame oil, 1 tablespoon of sesame oil, chicken powder, and garlic. If you don't like chicken powder, you can skip it. Just smash the garlic coarsely, I put three or four cloves, you can decide the amount according to your preference.

Add sugar, star anise, cinnamon, bay leaves, pepper, ginger slices, etc. to the light soy sauce and boil in a pot. Cook until only half of the soy sauce is left, then turn off the heat and make a copy of the soy sauce. If you don't have this kind of copy soy sauce, you can use soy sauce and some sugar instead. It is recommended that you make more of this soy sauce at a time. It is usually used as a cold dish. It tastes very good. Mix the cooked copy soy sauce with other seasonings. Taste the saltiness. If you feel it is not salty enough, you can adjust some light soy sauce yourself.

After the water is boiled, put in the active fermented hollow noodles. This dried noodle is different from ordinary dried noodles in that the middle is hollow, which is particularly absorbent. Don't look thick, but don't have to cook for too long. After boiling, cook for four or five minutes, turn off the heat, cover and simmer for a while. The noodles have no hard core as the standard, the soup is not muddy, and the noodles are not sticky.

Take the cooked noodles out and rinse them in cold water to make the noodles firmer and less sticky, and only taste more refreshing. If you use regular noodles, it is recommended that you mix a little sesame oil into the noodles at this time. The hollow noodles can be left on, and they are still not sticky.

Remove the noodles, add the shredded cucumber and chicken, and pour in the seasoning.
