I learned to make sour noodle soup with the chef. After that, I added a little bit of my own experience. After the master taught me to make sour noodle soup, I added a "bird's nest omelette" in the bowl. My assumption is that in the morning, I want Xiaobao, who is taking the college entrance examination in June, to eat a bowl of sour and refreshing sour noodles, so that the staple food will be ingested, and the bird’s nest omelette will have the fragrance of leeks. Coupled with the high protein intake of eggs, the bowl of noodles my little treasure eats in the morning is the best nutritional match. "

Sour Noodle Soup

1. Prepare ingredients: Wash the green onion, ginger and garlic and set aside.

2. Mince green onion, mince garlic, shred ginger, and prepare appropriate amount of white sesame and chili noodles.

3. Prepare a large bowl and add chopped chives.

4. Then add garlic.

5. Add ginger, white sesame and chili noodles in order. (The stacking order is very important, the chili noodles must be placed on the top layer).

6. Pour an appropriate amount of cooking oil into the pot and heat it until it is hot and quickly pour it into the ingredients in the bowl, and you can hear the sound of eating.

7. Add salt, soy sauce and balsamic vinegar, and scoop a certain amount of noodle soup from the boiling pot (I previously cooked a bowl of noodles for myself).

8. Bring the water to a boil.

9. Before the noodles are cooked, add the lettuce and chives and cook together.

10. Take out the noodles and greens and pour them into a bowl, then add the blanched soybean sprouts that was not finished last night, and stir evenly with chopsticks.

11. Pair it with a bird's nest omelette and you can start Xiaobao to eat it.

12. Attachment: Steps for fried eggs in bird's nest: Wash 4 or 5 leeks and blanch them in a boiling pot.

13. Weave two leek-like bird's nest shapes (I made two) like weaving straw hat loops in childhood.

14. Knock two eggs into the two bird's nests, and sprinkle salt on both sides during frying.

15. Is the Bird's Nest very vivid? With such a side dish, it is impossible for you not to eat it.
