Stewed Crystal Fish

Clean up Jingyu.

Cut the green onion, ginger and garlic.

Heat oil, add green onion, ginger, garlic and saute until fragrant.

Add the crystal fish, flourish the fire, and cook into the cooking wine.

Add the aged vinegar.

Add appropriate amount of oyster sauce.

Add water, bring to a boil on high heat, add salt to taste, and simmer for 5 minutes on low heat.

After turning gently, simmer for 1 minute to turn off the heat.

Put it out of the pot and serve it on a plate.
Tips:
1. Use a strong fire when cooking the cooking wine and vinegar to facilitate the evaporation of the fishy smell.
2. It is not necessary to use aged vinegar, other varieties of vinegar can also be used.
