Stir-fried Crab with Ginger and Green Onion

One Vancouver crab.

First, clean the surface of the whole crab, and then remove the crab shell.

Use scissors to cut off the tiny white soft strips on the crab's body. This is the crab's gills and cannot be eaten.

Handle clean crabs.

Cut the good crab into pieces. The shell of the crab claws was broken with a hammer.

The "Ginger Scallion Fried Crab" I made is a bit different from the restaurant's. The restaurant's "Ginger Scallion Fried Crab" wraps the crab pieces in cornstarch and fry them before frying. I personally feel that this is greasy, so I didn't cook it in this way. Instead, directly put the chopped crab pieces into the wok and fry them. The characteristic of this method is that it is relatively refreshing and original.
