Sweet and Sour Lotus Root

Peel and clean the fresh lotus root and dice.

Boil the lotus roots with hot water in a pot, and then super cool the water to control the moisture.

Add light soy sauce, dark soy sauce, cooking wine, aged vinegar, sugar, salt, chicken essence, and a little water to a small bowl and mix well.

Prepare a little water starch.

Heat up a wok, add vegetable oil, add chopped green onion and sauté until fragrant.

Add the blanched lotus root and millet pepper and stir fry for a while.

Pour in the pre-adjusted sauce and stir-fry evenly.

Add water and starch in two times and stir fry evenly, so that the seasoning is evenly coated on the ingredients.

Tips:
1. Adjust the sweet and sour sauce according to your own taste. Mine is half a lotus root. It is really difficult to quantify the amount of seasoning.
2. You don't need to put all the water starch in, just add it in batches until it is suitable.
