Sweet and Sour Pork Ribs

Prepare ingredients: pork ribs, dark soy sauce, light soy sauce, salt, sugar, vinegar, oil, ginger, star anise, white sesame seeds, spring onions, cooking wine, carrots, rape moss (not the whole picture).

Blanch the pig's front small row (Key points: blanch the small row under cold water. Do not cover the pot or add salt when blanching the water. Put cooking wine directly in the pot to remove the fishy. To save time, add an appropriate amount to the pressure cooker while blanching the water. Boil the water for later use).

Put the blanched small ribs, ginger slices, and star anise in the pressure cooker together. After 9 minutes on high heat, put the pan under the tap and let the pressure cooker with water (points: do not put salt in the pan).

Remove the ribs, drain them, and then put them in a small bowl to let cool. Spread the ribs with a little salt and dark soy sauce, and marinate the ribs for 20 minutes (less salt, don't be salty).

Rinse the marinated ribs with water and drain them for later use (in case that the soy saucepan will affect the taste when the ribs are fried in a frying pan).

Put a little oil in the pot, fry the ribs on both sides on a low fire, and then put the ribs out of the pot after they are fried (watch the pot at this moment, and be careful not to paste the pot).

Put a small bowl of pork rib soup in the wok, then add the mixed sauce and simmer for 1 minute (a spoonful of sugar, a spoonful of raw oil, a little water to adjust evenly), then put the fried ribs in the pan, and simmer. After 10 minutes, add half a spoon of vinegar and simmer for 1 minute. Heat up the soup.

The sweet and sour spare ribs are put out and served on a plate, sprinkled with white sesame seeds and chives, and the sweet and sour spare ribs are ready.
