Vegan Lunch Quiche

1. Preheat the oven to 200 degrees (degrees Celsius) and spread oil, butter or cooking spray on the large pie pan.

2. Put the sour cream and eggs in a large bowl and stir to combine. Add oatmeal and flour to make the dough firm and thick. Add olive oil and knead the dough until the dough becomes smooth. Spread the dough on the pie pan, making sure that the dough covers the pie pan.

3. Finely chop peppers, mushrooms, broccoli, red onion, garlic and coriander. Mix them in a bowl and spread on the dough.

4. Whisk the eggs, sea buckthorn powder and spices together, and slowly mix them with sour cream or cream cheese.

5. Pour the egg mixture evenly over the filling and stir the mixture in a bowl to ensure that the spices are evenly distributed in the mixture.

6. Bake the quiche in the oven for about 45 minutes, or until the top is set and slightly puffed.

7. Chill for 30 minutes before serving. If you like, sprinkle more sea buckthorn powder.

8. Serve with salad or sliced vegetables.
