Vegetarian Fried Yellow Kway Teow

Cut the yellow kueh into strips.

Shred the carrots.

Shred the fresh shiitake mushrooms.

Cut the tender celery into sections and the tender green garlic into sections.

Cut the green cabbage leaves into sections and prepare a small amount of green onion.

Heat an appropriate amount of vegetable oil in a wok, first add shredded carrots and shredded mushrooms, stir-fry, add appropriate amount of salt, and stir-fry for 30 seconds. Add the celery, green garlic, and green cabbage leaves and stir fry for 30 seconds. Then add the watered yellow kway teow, stir fry for 2 minutes, sprinkle some chopped green onion, add appropriate amount of MSG, stir fry for a while before serving.

Tips:
1. The yellow kuey teow must be watered before being put into the pan, otherwise the kuey teow will stick to the pan easily.
2. Use medium or high heat during the stir-frying process. Remember to stir-fry continuously, otherwise the kuey teow will stick to the pan.
