Gelatine tablets should be soaked in ice water in advance to soften, so be sure to use ice water, otherwise the gelatine tablets will melt partly, which will affect the solidification effect.

Boil the milk on and off the heat, and add the soaked gelatine slices.

Stir well until the gelatin flakes are melted.

Add honey to taste, you can also use sugar, I like honey, it's healthier.

The red pitaya flesh is whipped into a paste with a food processor.

Pour into the milk and stir well.

Light cream with sugar.

Use a whisk to stir until it does not flow.

Pour the mixed dragon fruit milk into the whipped cream.

Stir it evenly with a tossing method.

Pour into the mold and freeze for about 3 hours. This amount uses my mold to make 3 mousses. In addition, I made a dragon fruit ice cup without whipped cream, and the other two were pea mousse, which were frozen together.

After freezing, take off the mold and put the avocado ice cream made before. You can also use other ice creams, depending on your preference.

I forgot to take a picture of the way it was demoulded. This one has no whipped cream. I also put some ice cream in the hollow part, but I can still see what it looks like, so let’s use it to explain.
Tips:
Gelatine tablets weigh 5 grams each and can solidify about 200 grams of liquid. If you buy 2.5 grams of gelatine tablets, double it, otherwise it will not solidify. You can also use the same amount of gelatine powder.
