Braised Fish Head

Prepare ingredients and seasonings

Clean the fish head on the plate you bought, and cut the fish head in half from the back with a knife

Pour shredded ginger, rice wine, white pepper and marinate for 10 minutes

Coat some flour

Pour the oil in the hot pan, put the fish head in the pan and fry it, just turn it over once

Wait for the fish head to fry until golden brown, remove and set aside

Heat the pan with cold oil, pour the ingredients into the pan until fragrant

Put the fish head in the pot, pour the seasoning and enough water to just submerge the fish head

Bring to a boil on high heat, then reduce to medium and low heat and simmer for 20 minutes. Put it on a plate and sprinkle with chives
Tips:
1. When frying fish, wait until one side is fully fried, and then turn the other side to prevent the fish head from falling apart, just turn it once
2. You can use no flour or egg white here to prevent sticking to the pan
3. Because the fish head is basically frozen and contains salt, no salt is used in the process
